Caramel

Caramel (/ˈkærəmɛl/ or /ˈkɑːrməl/) is an orange-brown confectionery product made by heating a range of sugars. It is used as a flavoring in puddings and desserts, as a filling in bonbons or candy bars, or as a topping for ice cream and custard.

The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic color and flavor.

Ingredients

1 cup graham cracker crumbs

2 cups sugar

4 tablespoons butter, melted

5 packages cream cheese, 8-ounce packs, softened

3 tablespoons flour

1 tablespoon vanilla

1 cup sour cream

4 eggs

Directions

Mix graham cracker crumbs, 3 tablespoons of sugar, and butter for the Caramel Pecan Cheesecake recipe. Press firmly onto the bottom of a 9-inch spring form pan. Bake at 325 degrees for 10 minutes. Meanwhile, beat the cream cheese, remaining sugar, flour, and vanilla. Add sour cream and mix thoroughly. Add eggs; one at a time mixing on low speed. Pour over the crust. Bake at 325 degrees for 65 minutes until the center is almost set. Cool before removing the rim of the pan. Refrigerate for 4 hours or overnight. Garnish the entire top of the cake with the caramel syrup topping by making swirls. Arrange pecan halves around the edge. Enjoy!
