Cinnamon
Cinnamon is a spice obtained from the inner bark of several tree species from the genus Cinnamomum. This spice is used mainly as an aromatic condiment and flavoring additive in a wide variety of cuisines, sweet and savory dishes, breakfast cereals, snack foods, bagels, teas, hot chocolate, and traditional foods. The aroma and flavor of cinnamon derive from its essential oil and principal component, cinnamaldehyde, as well as numerous other constituents including eugenol.
Cinnamon trees
Cinnamon is the name for several species of trees and the commercial spice products that some produce. All are members of the genus Cinnamomum in the family Lauraceae. Only a few Cinnamomum species are grown commercially for spice. Cinnamomum verum (alternatively C. zeylanicum), known as “Ceylon cinnamon” after its origins in Sri Lanka (formerly Ceylon), is considered to be “true cinnamon”, but most cinnamon in international commerce is derived from four other species, usually and more correctly referred to as “cassia”: C. burmanni (Indonesian cinnamon or Padang cassia), C. cassia (Chinese cinnamon or Chinese cassia), C. loureiroi (Saigon cinnamon or Vietnamese cassia), and the less common C. citriodorum (Malabar cinnamon).
In 2021, world production of cinnamon was 226,753 tonnes, led by China with 43% of the total.
Ingredients
2 cups sifted all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/4 cup vegetable oil;
3/4 cup buttermilk
8 tablespoons (1 stick) butter, softened
3/4 cup granulated sugar
1 teaspoon cinnamon
1 cup milk, optional
Directions
Mix well with flour, baking powder, salt, and baking soda in a medium bowl. Stir in vegetable oil. Add buttermilk and stir just until blended.
Knead the dough on a lightly floured surface until smooth. Roll dough into a 15 x 8-inch rectangle.
Preheat the oven to 400 degrees. Grease a 9-inch round baking pan lightly.
Spread butter over the dough. Combine granulated sugar and cinnamon in a small bowl and mix well. Sprinkle over butter. Roll up rectangle, jelly-roll fashion, starting from one long side. Pinch seam to seal.
Cut the roll into 1 and 1/2-inch slices. Arrange the slices, cut side up, in prepared baking pan. Bake until lightly browned, about 15 to 20 minutes. Remove from oven. Pour milk over the top, if desired. Serve hot.
