Stuffed Baked Potatoes recipe

Ingredients

4 baking potatoes

3 tablespoons butter

1 onion, chopped

10 ounces broccoli, chopped

1/2 cup ranch dressing

1 tablespoon oil

2 tablespoons parsley

salt and pepper to taste

Directions

When making Stuffed Baked Potatoes, preheat the oven to 425 degrees. Pierce the potatoes a few times with a fork. Rubbing the outside of the potatoes with oil before baking helps them absorb more heat and allows the potatoes to cook quickly. Microwave potatoes for 12 minutes; then bake for 15 minutes. Slice off potato tops. Scoop out all of the potato pulp making sure not to tear the potato shell. Mash pulp in a bowl. Melt butter in a skillet. Add onion and saute for 5 minutes. Add onion, broccoli, and ranch dressing to potato pulp. Mix well. Brush the outside of potato skin shells with oil. Spoon potato mixture into shells, dividing evenly. Place on a baking sheet and bake for about 15 minutes. Sprinkle with parsley—salt and pepper to taste. Enjoy!
