Slow Cooker Chuck Roast

Chuck Steak

Chuck steak is a cut of beef and is part of the sub-prime cut known as the chuck.

The chuck steak, also known as a “7-bone steak,” is a rectangular cut that is approximately 2.5 cm (1 inch) thick and includes parts of the shoulder bones. People often grill or broil this cut. Another option is to prepare a thicker variation called a “7-bone roast” or “chuck roast” as a pot roast by cooking it with liquid.

Chuck steak is not too expensive

The bone-in chuck steak or roast is one of the more economical cuts of beef. In the United Kingdom, this part is commonly referred to as “braising steak”. It is particularly popular for use as ground beef for its richness of flavor and balance of meat and fat.

Ingredients

2 to 3-pound chuck roast

1 large onion, sliced

1 6-ounce can of mushroom steak sauce

3/4 cup beef broth

salt and pepper

1 tablespoon garlic powder

4 tablespoons liquid butter alternative or vegetable oil

1 tablespoon thyme

1 tablespoon garlic and herb spice blend

Directions

To make this Slow Cooker Chuck Roast, turn the crock pot on high to get it nice and hot. Heat the butter or oil in a heavy skillet over medium-high heat. Sprinkle with salt and pepper on both sides. Sear the roast for 2 minutes on each side until it’s golden brown. Searing the meat before cooking helps keep all the juices inside while cooking making for a juicier roast.

Transfer roast to crock pot along with all the drippings. The drippings have a ton of flavor. Add the beef broth around the sides. Add enough water to cover the sides, but not enough to cover the roast. Sprinkle with garlic powder and herb blend. Cover the top with the sliced onions.

Sprinkle with thyme. Add the mushroom steak sauce.

Cooking time for the chuck roast

Cover the crock pot, set to low heat, and cook for 7 and 1/2 hours, or until fork-tender.
