This is my mother’s dressing handed down to me from my mother Virginia. This is how she has given it to me. As of 2023, my mother is in her eighties and is not big on measurements, but somehow it always comes out perfect!
Dressing
Stuffing, filling, or dressing is an edible mixture, often composed of herbs and a starch such as bread, used to fill a cavity in the preparation of another food item. Many foods may be stuffed, including poultry, seafood, and vegetables. As a cooking technique, stuffing helps retain moisture, while the mixture itself serves to augment and absorb flavors during its preparation.
Poultry stuffing often consists of breadcrumbs, onion, celery, spices, and herbs such as sage, combined with the giblets.  Additions in the United Kingdom include dried fruits and nuts (such as apricots and flaked almonds), and chestnuts. (Wikipedia)
Ingredients
2 boxes of cornbread mix
1 bag of stuffing, cornbread, or sage flavor
fresh parsley, chopped
1 onion, chopped
1 stalk of celery, chopped
1 green pepper, chopped
garlic, probably 1 clove, minced
chicken broth, maybe 1 carton
butter, 1 stick should be good, melted
2 eggs, beaten
poultry seasoning to taste
Directions
To make My Mother’s Dressing, simmer the onion, celery, and green pepper, in some of the chicken broth until tender. Mix all the ingredients, adding more chicken broth until moist, and is mixed well. Put in a greased baking dish and bake at 350 degrees for 1 hour. Cover for the first 40 minutes, and uncover for the last 20 minutes.
