what’s better than chocolate? chocolate with mint! meet the mint chocolate cake
Ingredients
1 box of your favorite chocolate cake mix
3 large eggs
1 and 1/2 cups buttermilk
1/2 cup oil, canola preferred
1 cup chocolate chips
1 cup butter, at room temperature
2 pounds powdered sugar
1/2 cup milk, whole or 2%
3/4 teaspoon peppermint extract
1/2 cup soft chocolate mint candy, chopped
Directions
To make this mint chocolate cake, start by heating the oven to 350 degrees. Coat two 8″ round cake pans with a non-stick cooking spray. Mix the cake mix, the eggs, the buttermilk, and the oil, beat on low speed for 30 seconds; then 2 minutes on medium speed. Add the chocolate chips. Pour the mixture into the two prepared pans. Bake for 35 minutes, or until a toothpick comes out clean.
Cool for 5 minutes. Remove the cakes from the pans and cool completely. In a bowl, beat the butter at medium speed until it is fluffy. Reduce to low speed and beat in 1/2 of the powdered sugar and 1/4 cup of the milk. Add the extract and the remaining sugar and milk. Increase to medium speed and beat until it is smooth. In a separate bowl, combine 1 1/2 cups of the frosting with the candy. Place one cake on a plate. Spread the top with frosting. Top with the remaining cake, and frost the rest of the cake with the rest of the frosting. Garnish with the remaining candy. Enjoy!
