A crêpe or crepe (/kreɪp/ or /krɛp/, French: [kʁɛp, Quebec French:[kʁaɪ̯p) is a very thin type of pancake. Crêpes are usually one of two varieties: sweet crêpes (crêpes sucrées) or savoury galettes (crêpes salées). They are often served with a wide variety of fillings such as cheese, fruit, vegetables, meats, and a variety of spreads. Crêpes can also be flambéed, such as in crêpes Suzette.
Seasoned pork and mushrooms are wrapped in thin pancakes, and then baked until crispy is the secret to these Ground Pork Stuffed Crepes!
Ingredients
1 cup all-purpose flour
1 egg
salt
freshly ground pepper
1 cup fat-free milk
3 tablespoons olive oil
2 onions, chopped
6 ounces mushrooms, chopped, 2 cups
3/4 pound ground pork
1 can(14.5 oz.) tomatoes
4 fresh sage leaves, finely chopped, or 1/2 teaspoon dried sage
4 large tomatoes, sliced
1/2 cup shredded parmesan
Directions
Place the four in a bowl to make these Ground Pork Stuffed Crepes. Make a well in the center of the flour; add egg and 1/8 teaspoon of salt. Gradually whisk in the milk until a smooth batter forms. Cover; let stand 20 minutes.
Heat 2 tablespoons oil in a large skillet over medium heat. Add onions; cook, stirring occasionally, until softened, 3 minutes. Next, add the mushrooms; cook, stirring occasionally, 2 minutes. Finally, add pork, canned tomatoes, and sage; cook, stirring often, for 15 minutes. Remove from heat; season to taste with salt and pepper.
Preheat oven to 350 degrees. Heat 1 tablespoon oil in 8″ skillet over medium heat. Pour in just enough batter to cover the bottom of the pan thinly, about 1/2 cup. Cook until golden brown, 1 minute. Turn over; cook the other side, for 30 seconds. Transfer to a plate. Keep warm while cooking the remaining crepes.
Putting the crepes together
Divide the meat mixture into eight portions; place one portion in a strip down the center of each crepe. Roll up crepes to encase stuffing. Transfer, seam side down, to a jellyroll pan; top with tomatoes. Sprinkle with parmesan. Bake until crispy, about 15 minutes. Enjoy!
